I was watching a friend fix dinner a couple of months ago and scolding myself for how slack I have become with cooking. My hubby is a full time student and has an internship where he works in the evenings. When he is home for dinner, he is usually the one cooking. When he’s not home, dinner is usually one of the following: chicken nuggets, noodles or sandwiches. When I commented to my friend how impressed I was with the dinner she was preparing, she let me know it was super easy and wrote down the recipe.
Guess what? The recipe (for margarita fajitas) is, in fact, super easy… And surprisingly kid friendly! The monkey boy prepared and ate two full fajitas and the monkey girl (who never eats) took down one of her own!
Ok. Enough talk, here’s the recipe:
In a large ziplock bag, combine
– the juice from 3 limes
– 1/4 cup extra virgin olive oil
– 2 T. Tequila
-1 t. Salt
– 1 t. Lime zest
– 1/8 t. Cayenne pepper
– 4 boneless chicken breast
Marinate for One Hour
Grill the chicken
Reserve the marinade to saute your favorite fajita veggies!
