To start pumpkin week, we had to prepare the pumpkin! Remember, we don’t use canned pumpkin around here! Baking a pumpkin is easy. Open it up, scoop out the pulp and seeds, slice it down the middle and place it face down on a foil lined baking sheet. (Similar to baking a butternut squash).

Bake at 350 for about 55 minutes- you want the pumpkin to be soft and the peel easily removed. After you peel the pumpkin, throw it in the blender/ food processor/ magic bullet and puree. You may need to add water to aid the puree process.

Tada! Now you have lots and lots of pumpkin to add to all sorts of yummy recipes!
