Pumpkin bread was a favorite in my family growing up and has now become a favorite with my children (well, most of them). This is a family recipe that I have tweaked.

3 1/3 c flour (I used 2 cups whole wheat and 1 1/3 unbleached all purpose)
3 cups sugar (I used 1 1/2 cup splenda/ sugar substitute)
2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp allspice
1 tsp salt
2 cups pumpkin
1 cup oil
4 eggs, beaten
2/3 cup water

combine sugar, oil, pumpkin, and eggs- beat well
sift dry ingredients together and add to pumpkin mixture. beat well and add water

pour batter in to 4 greased and floured loaf pans. Bake at 350 for 45 min- 1 hour.
