I promised an award winning pumpkin recipe this week. About 6 years ago, our church had a pumpkin cook off and awarded prizes to the dish with the most votes. This yummy pumpkin treat won! The prize…pot holders! So…here’s the award winning recipe.
1/2 cup butter
1 cup brown sugar
1 1/2 cup flour (I combined whole wheat with unbleached all purpose)
1 tsp baking powder
1 tsp salt
2 cups pumpkin
1 can sweetened condensed milk
2 tsp pumpkin pie spice
1 1/2 tsp vanilla
1 cup pecans
-preheat the oven to 350
-beat butter and brown sugar until fluffy, then add flour, oats, baking powder, and 1/2 tsp salt- mix until crumbly
-reserving 1/2 cup of the flour mixture, press the remainder on the bottom of a 15 x 10 pan – bake 20 min.
-in a medium bowl, combine pumpkin, milk, eggs, spice, vanilla and 1/2 tsp salt- spread over baked crust.
-in a small bowl, combine 1/2 cup flour mix with pecans – sprinkle over pumpkin mix
-bake 30-35 min.
**I like to chop up the pecans first**
