I usually only plan meals for Monday through Friday. We eat our leftovers over the weekend!
Monday: Creamy Chicken Casserole (see below for recipe)
Tuesday: Taco Tuesday- I am trying out homemade Taco Seasoning!
Wednesday: Tator Tot Casserole
Thursday: Crock Pot Beef Roast with potatoes and carrots
Friday: White Chicken Lasagna … this is my first time trying this!
Creamy Chicken Casserole:
3- 4 chicken breasts
2 cups sour cream
2 cans cream of mushroom soup (I use my own cream of _______ soup… you can find the recipe here.)
1 cup instant rice
1/2 sleeve ritz crackers
Chop up the raw chicken breasts. Mix everything but the ritz crackers and place in casserole dish. Bake at 350 for 40 minutes. Remove from oven and sprinkle crushed ritz crackers over the top of casserole and return to oven for about 10-15 minutes.
**I like to sprinkle poppy seeds into the mix as well
